  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • 1 avocado, diced (optional, for garnish)
  • Sliced jalapeños (optional, for garnish)

Instructions

  • Cook the Beef:
    • Preheat your oven to 375°F (190°C).
    • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if needed.
    • Add the diced onion and minced garlic, cooking until the onion is translucent.
  • Assemble the Casserole:
    • Stir in the taco seasoning mix, salsa, black beans, and corn. Cook for another 2-3 minutes to heat through.
    • Transfer the beef mixture to a greased baking dish (about 9×13 inches).
  • Add Toppings:
    • Sprinkle shredded cheddar cheese evenly over the beef mixture.
    • Top with crushed tortilla chips.
  • Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Serve:
    • Top with dollops of sour cream and garnish with chopped cilantro, diced avocado, and sliced jalapeños if desired.
