- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tsp Italian seasoning
- 8 oz lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- In a large pot, sauté onion and garlic until softened.
- Add chicken broth, diced tomatoes, Italian seasoning, and shredded chicken. Bring to a boil.
- Add broken lasagna noodles and simmer until noodles are cooked through.
- Stir in mozzarella and Parmesan cheese until melted.
- Stir in heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh basil.
