Description

This comforting White Chicken Lasagna Soup combines all the delicious flavors of lasagna in a hearty soup form. Tender chicken, creamy cheeses, and savory Italian seasoning come together in a rich broth, with lasagna noodles added for a satisfying bite.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  • In a large pot, sauté onion and garlic until softened.
  • Add chicken broth, diced tomatoes, Italian seasoning, and shredded chicken. Bring to a boil.
  • Add broken lasagna noodles and simmer until noodles are cooked through.
  • Stir in mozzarella and Parmesan cheese until melted.
  • Stir in heavy cream and season with salt and pepper.
  • Serve hot, garnished with fresh basil.

Notes

  • You can use cooked rotisserie chicken for a quicker option.
  • If you prefer a lighter version, you can substitute the heavy cream with half-and-half or milk.
  • For extra flavor, top with extra cheese before serving.
