- 1 1/2 cups graham cracker crumbs
- 1/4 cup butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup white chocolate chips, melted
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, sliced
Instructions
- Preheat the oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan. Bake for 10 minutes.
- Beat cream cheese and sugar until smooth. Add melted white chocolate and vanilla extract, mixing until combined.
- Add eggs one at a time, beating after each addition. Pour the batter over the crust.
- Bake for 50-60 minutes, or until the center is set. Cool to room temperature, then refrigerate for at least 4 hours.
- Top the cheesecake with fresh strawberries before serving.

For best results, let the cheesecake chill overnight before serving.
