A delightful and creamy dish featuring whole wheat pasta, tender chicken breast, and a rich ricotta cream sauce with sun-dried tomatoes and fresh basil. This dish is hearty and full of flavor, perfect for a comforting meal.


Ingredients

  • 8 oz whole wheat pasta
  • 2 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the chicken breasts with salt and pepper. Cook in a skillet over medium heat until no longer pink in the center. Remove from the skillet and let it rest before slicing into thin strips.
  • In the same skillet, add the garlic and cook for 1 minute. Add the ricotta cheese, Parmesan cheese, basil, and sun-dried tomatoes. Stir until well combined and heated through.
  • Add the cooked pasta and chicken strips to the skillet. Toss until everything is evenly coated with the sauce.
  • Serve hot and enjoy!

Notes

  • For added richness, you can drizzle a little olive oil over the chicken before cooking.
  • If you like a stronger flavor, feel free to add more sun-dried tomatoes or basil to the sauce.
