- 1 teaspoon vanilla extract
Instructions
- In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes to bloom.
- In a saucepan, heat lemon juice, lemon zest, and honey until warm.
- Add bloomed gelatin to the lemon mixture and stir until completely dissolved.
- In a large bowl, whisk Greek yogurt and poppy seeds together.
- Slowly pour the lemon mixture into the yogurt mixture, stirring constantly.
- In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the yogurt mixture until well combined.
- Pour the mousse mixture into a cake pan and refrigerate for at least 4 hours or until set.
- Serve chilled and enjoy!
