These crispy Zucchini Fritters are a perfect way to enjoy the fresh, light flavor of zucchini in a savory, golden-brown bite. With Parmesan and garlic, they’re an ideal snack or side dish. Quick and easy to make, these fritters are great with a dipping sauce or on their own!


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 2 tablespoons olive oil

Instructions

  • Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  • In a large bowl, combine the zucchini, flour, Parmesan cheese, garlic, and egg. Mix until well combined.
  • Heat olive oil in a skillet over medium heat. Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with a spatula.
  • Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Serve the zucchini fritters hot with your favorite dipping sauce.

Notes

  • Make sure to squeeze out as much moisture as possible from the zucchini to avoid soggy fritters.
  • If you prefer a lighter version, you can bake the fritters at 400°F (200°C) for about 20 minutes, flipping halfway through.
