- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg, beaten
- 2 tablespoons olive oil
Instructions
- Place the grated zucchini in a colander and sprinkle with salt. Let sit for 10 minutes, then squeeze out excess moisture.
- In a large bowl, combine the zucchini, flour, Parmesan cheese, garlic, and egg. Mix until well combined.
- Heat olive oil in a skillet over medium heat. Scoop spoonfuls of the zucchini mixture into the skillet, flattening them slightly with a spatula.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Serve the zucchini fritters hot with your favorite dipping sauce.
Notes
- Make sure to squeeze out as much moisture as possible from the zucchini to avoid soggy fritters.
- If you prefer a lighter version, you can bake the fritters at 400°F (200°C) for about 20 minutes, flipping halfway through.
