Description

Zucchini Patties are a delicious, savory way to enjoy zucchini! Instructions

  • Prepare the zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or paper towels and squeeze out as much moisture as possible. This step is important to avoid soggy patties.

  • Combine ingredients: In a large bowl, mix the well-drained zucchini with the chopped onion, parmesan cheese, flour, eggs, mayonnaise, oregano, salt, and black pepper. Stir until the mixture is evenly combined.

  • Form the patties: Using your hands, shape the zucchini mixture into small patties (about 2 to 3 inches in diameter). Press gently to ensure they hold together.

  • Cook the patties: Heat olive oil in a large skillet over medium heat. Once hot, add the zucchini patties to the skillet, cooking them in batches if necessary to avoid overcrowding. Fry the patties for 3-4 minutes per side, or until golden brown and crispy. Use a spatula to flip them carefully.
