Description

Ingredients

  • 4 cups sliced zucchini (about 2 medium zucchinis)
  • 2 cups cherry tomatoes, halved
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil (optional, for garnish)

Instructions

  • Preheat Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • Sauté Vegetables:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and cook until softened, about 3-4 minutes.
    • Stir in the minced garlic and cook for another minute.
    • Add the sliced zucchini and cook until slightly tender, about 5 minutes.
  • Combine Ingredients:
    • Remove the skillet from heat and stir in the halved cherry tomatoes.
    • Season with dried basil, dried oregano, salt, and black pepper.
    • Transfer the vegetable mixture to the prepared baking dish.
  • Add Cheese:
    • Sprinkle the shredded mozzarella cheese evenly over the top of the vegetables.
    • Finish with a sprinkle of grated Parmesan cheese.
  • Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
  • Garnish and Serve:
    • Remove from the oven and let cool for a few minutes.
    • Garnish with chopped fresh basil if desired.
  • Enjoy:
