  • 2 cups cooked, shredded chicken
  • 1 ripe avocado, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 cup cooked black beans (optional)
  • 1/2 cup corn kernels (optional)
  • 8 large flour tortillas
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1/4 cup chopped fresh cilantro (optional)
  • Lime wedges for serving

Instructions

  • Prepare Filling:
    In a large bowl, mix the shredded chicken with ranch dressing until well coated. If using black beans and corn, add them to the mixture.
  • Assemble Burritos:
    Warm the flour tortillas in a dry skillet or microwave until pliable. Place a few slices of avocado in the center of each tortilla. Top with a portion of the chicken mixture, shredded cheese, shredded lettuce, diced tomato, and cilantro if using.
  • Wrap Burritos:
    Fold in the sides of the tortilla and roll up tightly from the bottom to enclose the filling. Place the wrapped burritos seam side down on a plate or baking sheet.
