Instructions

  2. Cook the Chicken: Heat 1 tablespoon of cooking oil in a wok or large pan over medium-high heat. Add the diced chicken, season lightly with salt and pepper, and cook for 5-7 minutes until browned and fully cooked through. Remove the chicken from the pan and set aside.
  3. Scramble the Eggs: In the same pan, pour the beaten eggs and stir quickly to scramble until just cooked. Remove the eggs and set aside with the chicken.
  4. Sauté Aromatics and Vegetables: If needed, add a little more cooking oil. Add minced garlic and grated ginger to the pan and stir for about 30 seconds until fragrant. Add the carrots and peas, sauté until they are tender but still crisp, about 2-3 minutes.
  5. Combine All Ingredients: Return the cooked rice, chicken, and scrambled eggs back into the pan. Pour the soy sauce evenly over the mixture and stir-fry everything together for 3-5 minutes, allowing the flavors to meld and the rice to heat through.
  6. Finish with Sesame Oil and Green Onions: Turn off the heat and drizzle sesame oil over the fried rice. Toss in the sliced green onions for freshness and mix well before serving.
