Instructions

  1. Prepare the Sausage and Vegetables: Heat olive oil in a large pot over medium heat. Remove Italian sausage from casings, crumble it, and cook until browned. Add chopped onions, garlic, carrots, and celery and sauté until softened and fragrant, about 5-7 minutes.
  2. Add Broth and Pasta: Pour in chicken broth and bring to a simmer. Stir in ditalini pasta and cook according to package instructions until al dente, usually around 8-10 minutes, stirring occasionally to prevent sticking.
  3. Stir in Cream and Parmesan: Lower the heat and add heavy cream, gently stirring to combine. Gradually sprinkle in freshly grated Parmesan cheese while stirring until fully melted and the soup is evenly creamy.
  4. Season and Finish: Season with salt and pepper to taste. Remove from heat and stir in chopped fresh parsley if desired for a bright pop of green and fresh flavor.
