Ingredients
Scale
Sausage and Vegetables
- 1 lb Italian sausage (sweet or spicy), casings removed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 2 tbsp olive oil
Broth and Pasta
- 6 cups chicken broth
- 1 cup ditalini pasta
Cream and Cheese
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
Seasoning and Garnish
- Salt and freshly ground black pepper, to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Prepare the Sausage and Vegetables: Heat olive oil in a large pot over medium heat. Remove Italian sausage from casings, crumble it, and cook until browned. Add chopped onions, garlic, carrots, and celery and sauté until softened and fragrant, about 5-7 minutes.
- Add Broth and Pasta: Pour in chicken broth and bring to a simmer. Stir in ditalini pasta and cook according to package instructions until al dente, usually around 8-10 minutes, stirring occasionally to prevent sticking.
- Stir in Cream and Parmesan: Lower the heat and add heavy cream, gently stirring to combine. Gradually sprinkle in freshly grated Parmesan cheese while stirring until fully melted and the soup is evenly creamy.
- Season and Finish: Season with salt and pepper to taste. Remove from heat and stir in chopped fresh parsley if desired for a bright pop of green and fresh flavor.
Notes
- Brown the sausage well to add texture and depth of flavor.
- Use freshly grated Parmesan cheese for better melting and richer taste.
- Watch the pasta closely and cook just until al dente to avoid sogginess.
- Do not boil the soup after adding cream to prevent curdling.
- For a thicker soup, reduce the broth slightly or add more Parmesan cheese.
