Ingredients
Scale
For the Salmon
- 4 salmon fillets (fresh or thawed, skin-on or skinless)
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning (or fresh herbs)
- 2 tablespoons olive oil or butter
For the Sauce
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh baby spinach
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning or fresh herbs
- Additional 1 tablespoon olive oil or butter (if needed)
Instructions
- Prepare the Salmon: Season the salmon fillets generously with salt, pepper, and Italian seasoning. Heat olive oil or butter in a large skillet over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown and just cooked through. Remove from the pan and set aside.
- Sauté Garlic and Sun-Dried Tomatoes: Lower the heat to medium. Add more olive oil or butter if needed to the same pan. Add minced garlic and chopped sun-dried tomatoes, stirring frequently for about 2 minutes until fragrant and vibrant.
- Create the Creamy Sauce: Pour in heavy cream and stir to combine with garlic and tomatoes. Add Parmesan cheese and simmer gently for 3-5 minutes until the sauce thickens. Season with salt, pepper, and Italian herbs to taste.
- Add Spinach: Stir in fresh spinach leaves and cook just until wilted, about 1-2 minutes, preserving the bright color and nutrients.
- Combine and Serve: Return the salmon fillets to the skillet, spoon the creamy sauce over the top. Let everything meld together on low heat for a minute, then plate and garnish as desired.
Notes
- Don’t overcook the salmon; slightly undercook when searing to finish cooking gently in the sauce and keep it juicy.
- Use fresh, high-quality ingredients like fresh garlic, baby spinach, and real Parmesan cheese for best flavor.
- If the sauce is too thick, thin it with a splash of chicken broth or white wine; if too thin, simmer a little longer.
- Preheat the pan properly for a golden crust on the salmon that locks in moisture.
- Serve immediately to enjoy the salmon tender and the sauce creamy and fresh.
