  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • Vegetable oil, for frying

For Serving:

  • Lemon wedges
  • Tartar sauce or ketchup
  • Fresh parsley, chopped (optional)

Instructions

  • Prepare the Cod:
    • In a large bowl, whisk together 1 cup flour, baking powder, paprika, garlic powder, onion powder, salt, and black pepper.
    • Gradually add the cold sparkling water, stirring until a smooth batter forms. The batter should be thick enough to coat the fish.
    • Pat the cod fillets dry with paper towels. Dip each fillet into the batter, allowing excess to drip off.
  • Fry the Cod:
    • Heat vegetable oil in a large skillet or deep fryer to 375°F (190°C).
    • Carefully place the battered cod fillets in the hot oil, frying in batches if necessary. Cook for 4-5 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  • Prepare the Onion Rings:
    • In a bowl, mix together 1 cup flour, baking powder, paprika, garlic powder, onion powder, salt, and black pepper.
    • Pour the buttermilk into a separate bowl.
    • Dip each onion ring into the buttermilk, then dredge in the seasoned flour mixture, coating evenly.
  • Fry the Onion Rings:
    • Heat vegetable oil in a large skillet or deep fryer to 375°F (190°C).
    • Carefully place the battered onion rings in the hot oil, frying in batches if needed. Cook for 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  • Serve:
    • Arrange the crispy battered cod fillets and onion rings on a serving platter.
    • Garnish with lemon wedges, and serve with tartar sauce or ketchup. Sprinkle with fresh parsley if desired.

Notes

For best results, ensure the oil is hot before frying to achieve a crispy texture. Keep the cooked fish and onion rings warm in a low oven if frying in batches.
