Indulge in this decadent cheesecake that combines the creamy richness of peanut butter with the irresistible taste of Reese’s cups.


Ingredients

For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup creamy peanut butter
  • 1/2 cup heavy cream
  • 1 cup chopped Reese’s peanut butter cups (about 810 pieces)

For the Ganache:

  • 1 cup chocolate ganache (melted chocolate mixed with equal parts heavy cream)

Instructions

  • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
  • Mix chocolate cookie crumbs and melted butter, then press into the bottom of the pan.
  • In a large bowl, beat cream cheese until smooth. Add sugar and vanilla; mix well.
  • Add eggs one at a time, mixing after each. Stir in peanut butter and heavy cream until smooth.
  • Fold in chopped Reese’s cups.
  • Pour filling over the crust, spreading evenly.
  • Bake for 55-70 minutes, until set and lightly browned.
  • Turn off oven, leave cheesecake inside with door slightly open for 1 hour to cool.
  • Refrigerate for at least 4 hours or overnight until fully set.
  • Drizzle melted chocolate ganache over the cheesecake before serving.
