For the Roast:

  • 1 (4-5 lb) prime rib roast
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

For the Glaze:

  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard

Instructions

  • Prepare the Roast:
    • Preheat your oven to 450°F (230°C).
    • Pat the prime rib roast dry with paper towels. Rub the entire roast with olive oil.
    • In a small bowl, mix together the minced garlic, rosemary, thyme, brown sugar, Dijon mustard, balsamic vinegar, salt, and pepper.
    • Rub the seasoning mixture evenly over the roast.
  • Roast the Beef:
    • Place the roast in a roasting pan with the fat side up.
    • Roast in the preheated oven for 20 minutes to develop a crust.
    • Reduce the oven temperature to 325°F (165°C) and continue roasting for 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Adjust the cooking time for desired doneness.
  • Prepare the Glaze:
    • While the roast is cooking, combine balsamic vinegar, honey, soy sauce, and Dijon mustard in a small saucepan.
    • Bring to a simmer over medium heat and cook for 5-7 minutes, until the glaze thickens slightly. Remove from heat.
  • Finish and Serve:
    • Remove the roast from the oven and let it rest for 15-20 minutes before slicing.
    • Brush the glaze over the roast just before serving or serve it on the side.
