For the Cake Roll:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

For the Caramel Filling:

  • 1 cup caramel sauce
  • 1/2 cup chopped pecans

For the Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter

Instructions

  • Preheat Oven: Preheat the oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper.
  • Prepare Cake Batter: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • Mix Wet Ingredients: In a large bowl, beat eggs and sugar until light and fluffy. Mix in brewed coffee, milk, vegetable oil, and vanilla extract. Gradually add the dry ingredients, mixing until just combined.
  • Bake the Cake: Pour the batter into the prepared pan and spread evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly.
  • Roll the Cake: While still warm, carefully roll the cake (with parchment paper) into a log shape. Allow to cool completely.
  • Add Caramel Filling: Spread caramel sauce over the unrolled cake, then sprinkle with chopped pecans.
  • Re-roll the Cake: Unroll the cake and re-roll it into a log shape, without parchment paper.
  • Prepare Ganache: For the chocolate ganache, heat heavy cream in a small saucepan until just boiling. Pour over chocolate chips in a heatproof bowl. Let sit for 2 minutes, then stir until smooth. Stir in butter until melted and glossy.
  • Frost the Cake: Pour the ganache over the rolled cake, spreading evenly. Let set before serving.
