This Italian-inspired pot roast is a flavorful, tender dish with a rich tomato-based sauce. The beef chuck roast is slow-cooked in beef broth, garlic, onions, and classic Italian herbs for a hearty and comforting meal.


Ingredients

  • 3 pounds boneless beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium-high heat.
  • Sear the beef chuck roast on all sides until browned.
  • Add chopped onion and minced garlic, sauté until fragrant.
  • Pour in beef broth and diced tomatoes.
  • Stir in dried basil, dried oregano, salt, and pepper.
  • Cover and simmer on low heat for 3-4 hours, until the meat is tender.
  • Serve hot and enjoy!

Notes

For a more intense flavor, let the roast cook longer. You can also add vegetables like carrots and potatoes to the pot for a complete meal.
