Description

Marry Me Salmon is an elegant and creamy salmon dish featuring tender fillets in a luscious sun-dried tomato and Parmesan cream sauce. Quick to prepare and made from simple ingredients, this recipe delivers restaurant-quality flavor perfect for special occasions or cozy dinners.

Ingredients

Scale

Salmon

  • 4 salmon fillets (fresh or thawed, skin-on or off, about 6 oz each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter (for searing)

Sauce

  • 2 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry and season lightly with salt and pepper. Heat olive oil or butter in a large skillet over medium-high heat. Sear the salmon skin-side down (if skin-on) for about 4 minutes until golden and crisp. Flip and cook an additional 3 minutes until just cooked through. Remove salmon from skillet and set aside.
  2. Make the Creamy Sauce: Reduce heat to medium. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant. Pour in the chicken broth to deglaze the pan, scraping up browned bits. Stir in sun-dried tomatoes, heavy cream, and Parmesan cheese. Let the sauce simmer gently until it thickens slightly.
  3. Add Herbs and Seasoning: Sprinkle fresh basil or parsley into the sauce. Adjust seasoning with salt, pepper, and red pepper flakes if using. Finish with a squeeze of lemon juice to brighten the flavor.
  4. Combine and Serve: Return the salmon to the skillet and spoon the sauce over the fillets. Warm everything together for 1–2 minutes. Serve immediately, garnished as desired.

Notes

  • Use room temperature salmon to ensure even cooking without drying out.
  • Don’t overcrowd the pan; cook the salmon in batches if needed for a nice sear.
  • Reserve cooking juices and deglaze the pan to capture all flavorful bits for the sauce.
  • Adjust sauce consistency by simmering longer to thicken or adding broth for a lighter texture.
  • Add fresh herbs at the end to maintain vibrant flavor and color.
