Instructions
For the Cake:
- Preheat oven to 350°F (175°C). Grease and flour four 8-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then mix in the vegetable oil, vanilla extract, and almond extract (if using).
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, until smooth.
- Gently fold in the sprinkles, being careful not to overmix to avoid color bleeding.
- Divide the batter evenly among the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
For the Buttercream Frosting:
- In a large bowl, beat the butter until creamy.
- Gradually add powdered sugar, beating on low speed until combined.
- Add the heavy cream, vanilla extract, and salt. Beat on high speed until the frosting is light and fluffy.
Assembling the Cake:
- Place one cake layer on a serving plate. Spread a layer of buttercream frosting on top.
- Repeat with the remaining cake layers, spreading frosting between each layer.
- Frost the top and sides of the cake with the remaining buttercream.
- Decorate with additional sprinkles as desired.
Notes
- Cake Layers: Ensure the cakes are completely cooled before frosting to avoid melting the buttercream.
- Sprinkles: Add sprinkles gently to the batter to maintain their color and texture.
- Frosting: If the frosting is too thick, add a bit more heavy cream to reach the desired consistency.
