Description

This One-Pot Chicken Pasta is an easy, flavorful dish with tender chicken, savory marinara sauce, and al dente penne pasta. It’s a simple, weeknight-friendly meal that packs a punch of flavor in just one pot!


Ingredients

Scale
  • 1 lb chicken breasts, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups chicken broth
  • 1 cup marinara sauce
  • 8 oz penne pasta
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add chicken and cook until browned.
  • Add onion, garlic, and bell pepper. Cook until vegetables are soft.
  • Stir in chicken broth, marinara sauce, penne pasta, Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is cooked and sauce has thickened.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

For extra creaminess, stir in a little heavy cream or shredded mozzarella cheese towards the end of cooking. You can also substitute the penne pasta with your favorite pasta shape.
