- 1 lb chicken breasts, diced
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 cups chicken broth
- 1 cup marinara sauce
- 8 oz penne pasta
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chicken and cook until browned.
- Add onion, garlic, and bell pepper. Cook until vegetables are soft.
- Stir in chicken broth, marinara sauce, penne pasta, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is cooked and sauce has thickened.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For extra creaminess, stir in a little heavy cream or shredded mozzarella cheese towards the end of cooking. You can also substitute the penne pasta with your favorite pasta shape.
