- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 1 packet (1/4 ounce) unflavored gelatin
- 2 tablespoons water

Instructions
1️⃣ Prepare Gelatin:
- In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom. Heat in the microwave for 10 seconds until dissolved. Set aside.
2️⃣ Mix Pumpkin and Coffee:
- In a large bowl, combine pumpkin puree, granulated sugar, cooled coffee, vanilla extract, pumpkin pie spice, and ground cinnamon. Mix well.
3️⃣ Whip Cream:
- In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the pumpkin mixture.
4️⃣ Add Gelatin:
- Fold the dissolved gelatin into the mousse mixture until well combined.
5️⃣ Chill:
- Spoon the mousse into serving glasses or bowls. Refrigerate for at least 2 hours or until set.
6️⃣ Serve:
- Before serving, top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice.
