- 2 cups cooked rice
- 1 chicken breast, cooked and diced
- 1 cup mixed vegetables (such as peas, carrots, and corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the cooked rice, chicken, and mixed vegetables to the skillet. Stir well to combine.
- Push the rice mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Mix the scrambled eggs into the rice mixture.
- Add soy sauce, sesame oil, salt, and pepper. Stir well and cook for another 2-3 minutes.
- Remove from heat and garnish with chopped green onions before serving.
