Instructions

  1. Prepare the Dough: Warm the milk to about body temperature and dissolve the yeast with 1 teaspoon of sugar in it. Let it activate until frothy, about 5 minutes. In a large bowl, combine flour, 1/4 cup sugar, salt, and lemon zest. Add beaten eggs, melted butter, and the yeast mixture. Stir until a soft, sticky dough forms.
  2. Knead and Let Rise: Turn the dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic. Place dough in a greased bowl, cover with a cloth, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  3. Roll and Fill: Punch down the risen dough and roll it out into a 12×16 inch rectangle. Spread softened butter evenly over the surface, then scatter fresh raspberries across the top. Roll the dough lengthwise tightly and slice into 12 equal rolls.
  4. Final Rise: Arrange the rolls in a greased baking dish, leaving space between each. Cover and let rise again for 30 to 45 minutes until puffy.
  5. Bake and Glaze: Bake rolls at 350°F (175°C) for 25-30 minutes or until golden brown. Allow to cool slightly, then drizzle with a powdered sugar glaze made by mixing powdered sugar with a small amount of milk or lemon juice for desired consistency.
