Description

A hearty and flavorful dish with Italian sausage, sautéed bell peppers, onions, and garlic, simmered in marinara sauce. This delicious meal can be served as a sandwich or over pasta for a comforting dinner.


Ingredients

  • 1 package of Italian sausage
  • 1 large onion, sliced
  • 2 bell peppers, sliced (any color)
  • 1 jar (24 oz) of marinara sauce
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh basil or parsley for garnish

Instructions

  • Prepare the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides. Once browned, remove the sausages from the skillet and set them aside.
  • Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté until the vegetables are tender, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  • Combine Ingredients: Return the sausages to the skillet with the vegetables. Pour in the marinara sauce, stirring to combine. Season with salt and pepper to taste.
  • Simmer: Reduce the heat to low, cover the skillet, and let the mixture simmer for 20-25 minutes, or until the sausages are fully cooked and the flavors have melded together.
  • Serve: Serve the sausage scallopini hot, either on a toasted roll as a sandwich or over a bed of pasta. Garnish with fresh basil or parsley if desired. Enjoy your meal!

Notes

  • If you prefer spicier sausage, opt for hot Italian sausage.
  • This dish can also be served over rice or polenta for a different base.
  • For extra flavor, you can add a splash of red wine or balsamic vinegar to the sauce.
