Ingredients

  • 1 lb peeled and deveined shrimp
  • 1 large zucchini, sliced
  • 3 small potatoes, sliced
  • 1 lb spicy Italian sausage, sliced
  • 1/4 cup olive oil
  • 2 tbsp chopped fresh parsley
  • 1 tsp minced garlic
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste
  • 4 large squares of aluminum foil

Instructions

  • Prep Your Veggies: Wash and slice the zucchini and potatoes. Finely chop the parsley.
  • Season Your Shrimp: In a bowl, combine the shrimp, olive oil, parsley, garlic, Italian seasoning, salt, and pepper. Toss to coat evenly.
  • Assemble the Foil Packs: On each square of foil, place an equal portion of zucchini, potatoes, sausage, and shrimp.
  • Seal It Up: Fold up the sides of the foil to form a loose packet. Pinch the edges tightly to seal the contents.
  • Grill or Bake:
    • Grilling: Preheat to medium-high heat. Place the foil packs on the grill and cook for 10-15 minutes per side, or until vegetables are tender and shrimp are pink.
    • Baking: Preheat the oven to 400°F (200°C) and bake for 20-25 minutes, or until heated through and the shrimp are cooked.
