What’s your favorite way to enjoy a classic Sloppy Joe—wrapped in a tortilla and grilled to perfection? These Sloppy Joe Grilled Burritos combine the savory, tangy flavors of a Sloppy Joe with the crispy goodness of a grilled burrito.

For the Sloppy Joe Filling:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional, for heat)

For the Burritos:

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream (optional)
  • 1 tablespoon olive oil, for grilling

Instructions

  • Prepare the Sloppy Joe Filling:
    • In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon. Drain any excess fat. Add the chopped onion, bell pepper, and garlic, and cook until softened, about 5 minutes.
  • Make the Sauce:
    • Stir in the ketchup, brown sugar, Worcestershire sauce, mustard, vinegar, paprika, black pepper, salt, and red pepper flakes (if using). Simmer for 10-15 minutes, until the sauce has thickened and the flavors are well combined. Remove from heat.
  • Assemble the Burritos:
    • Lay out the flour tortillas on a flat surface. Spoon a portion of the Sloppy Joe mixture onto the center of each tortilla. Top with shredded cheddar cheese, shredded lettuce, and diced tomatoes.
  • Fold and Grill:
    • Fold the sides of the tortilla over the filling and then roll up from the bottom to form a burrito. Heat olive oil in a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  • Serve:

Notes

These burritos are great for meal prep! Prepare the Sloppy Joe filling ahead of time and assemble the burritos just before grilling. You can also add other toppings like jalapeños or avocado for extra flavor.
