Ingredients
Scale
Main Ingredients
- 6 cups Rice Krispie cereal
- 1 cup fresh strawberries (washed, finely chopped, half mashed)
- 4 cups mini marshmallows
- 3 tablespoons butter
- 1 teaspoon vanilla extract
Optional Ingredients
- 1 tablespoon strawberry gelatin powder (for intensified flavor and color)
- White chocolate (for drizzle)
- Chopped almonds or pecans (for nutty crunch)
Vegan Alternative Ingredients
- Vegan marshmallows
- 3 tablespoons coconut oil (instead of butter)
Instructions
- Prepare the Strawberries: Wash and finely chop fresh strawberries. Gently mash half of them with a fork to release their juicy flavor. Set aside.
- Melt Butter and Marshmallows: In a large pan over low heat, slowly melt the butter. Add the marshmallows and stir continuously until the mixture is smooth and fully melted, taking care not to burn.
- Add Strawberry Flavor: Stir in the mashed strawberries along with the vanilla extract (and optional strawberry gelatin powder if using). Mix thoroughly to combine all flavors.
- Mix in the Cereal: Remove the pan from heat. Carefully fold in the Rice Krispie cereal to coat every piece without crushing it, preserving the crispy texture.
- Press Into a Pan: Lightly grease or line an 8×8 inch pan with parchment paper. Evenly press the cereal mixture into the pan using a buttered spatula or wax paper, avoiding compressing too hard.
- Chill and Cut: Allow the treats to cool at room temperature or refrigerate for about 30 minutes. Once set, cut into squares for serving.
Notes
- Use the freshest strawberries possible to maximize natural flavor and color.
- Melt marshmallows on low heat to prevent burning and achieve smooth texture.
- Gently fold in the cereal to maintain the treats’ light and crunchy consistency.
- Press mixture evenly but avoid compacting too hard for the ideal chewy-crisp balance.
- Store treats in an airtight container at room temperature to keep them soft and fresh up to 3 days.
- Freeze individual squares wrapped tightly for up to 2 months and thaw before serving.
- Reheat briefly in the microwave (10–15 seconds) if a softer texture is desired.
