This delicious grilled cheese features creamy ricotta, melted mozzarella, and flavorful sun-dried tomatoes with fresh spinach, all sandwiched between golden, buttery bread. A perfect twist on the classic grilled cheese!


Ingredients

Scale
  • 4 slices of bread
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach leaves
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Butter for spreading

Instructions

  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of 2 slices of bread, spread ricotta cheese.
  • Top ricotta with sun-dried tomatoes, spinach, and mozzarella cheese.
  • Place the remaining 2 slices of bread on top, buttered side facing out.
  • Cook sandwiches in a skillet over medium heat until bread is golden brown and cheese is melted, about 3-4 minutes per side.
  • Serve hot and enjoy!

Notes

You can add extra seasonings like garlic powder or a pinch of red pepper flakes for extra flavor. For a vegan option, substitute the ricotta and mozzarella with dairy-free cheese.
