- 4 slices of bread
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach leaves
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Butter for spreading
Instructions
- Spread butter on one side of each slice of bread.
- On the unbuttered side of 2 slices of bread, spread ricotta cheese.
- Top ricotta with sun-dried tomatoes, spinach, and mozzarella cheese.
- Place the remaining 2 slices of bread on top, buttered side facing out.
- Cook sandwiches in a skillet over medium heat until bread is golden brown and cheese is melted, about 3-4 minutes per side.
- Serve hot and enjoy!
Notes
You can add extra seasonings like garlic powder or a pinch of red pepper flakes for extra flavor. For a vegan option, substitute the ricotta and mozzarella with dairy-free cheese.
