This tropical twist on the classic tiramisu features the refreshing flavors of mango and passion fruit combined with the creamy richness of mascarpone and whipped cream. Perfect for summer or any occasion, this no-bake dessert is sure to impress with its exotic fruit layers and smooth, luscious texture.

- 1 mango, peeled and diced
- 2 passion fruits, pulp removed
- 250g mascarpone cheese
- 100g sugar
- 300ml heavy cream
- 1 tsp vanilla extract
- 200g ladyfinger cookies
- 1 cup strong coffee, cooled
Instructions
- In a bowl, mix together the mascarpone cheese, sugar, and vanilla extract until smooth and well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
- Dip the ladyfinger cookies into the cooled coffee, then arrange them in the bottom of a serving dish.
- Spread a layer of the mascarpone mixture over the soaked cookies, followed by a layer of diced mango and passion fruit pulp.
- Repeat the layers, finishing with a final layer of mascarpone mixture on top.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Serve chilled, optionally garnished with extra passion fruit pulp or mango slices.
Notes
- This dessert can be made ahead of time and stored in the fridge for up to 2 days.
- For a stronger coffee flavor, you can adjust the amount of coffee used to soak the ladyfingers.
- Feel free to add a bit of rum or liqueur to the coffee for a boozy twist.
